Christmas Menu Finalized

It was nice to have the house back to myself today, i know that is a terrible thing to say but i do miss my solitude.  i picked up some groceries and came back home to my bed and heating pad.  The discs in my back that have degenerated were really hurting today, i called the doctor and he has prescribed a narcotic so i hope that will help.  Sir asked me if i thought i could handle a trip to the dungeon tonight but i had to be honest and it wouldn't be a good idea.  Hopefully tomorrow night will be better after i've given the medicine to do it's job.

i love the holidays but it is so much stress...i made the call today and announced the menu for Christmas....we're having authentic Tico Tacos (i'll post the recipe below) but they are a lot of work and a lot of time on my feet...but they are soooooo good and they are a family favorite.  i'm searching for a larger deep fryer and one that runs hotter, i managed to burn mine out last year making the tacos!


Annia’s World Renown Tico Tacos

3 lbs of boneless chuck pot roast
Boil meat in enough water to cover meat for one hour and 15 minutes.
Add 2 cloves of garlic
Add 2 bay leaves

When the water begins to boil, lower heat to 3, but make sure water continues to boil.
After the above time, remove meat and let meat cool down.
After meat has cooled, shred by hand into long strips.
Do not discard the water the meat was cooked in.

Dice onion, red pepper into small pieces.
Mince garlic into small pieces.
Mix onion, red pepper, garlic together into separate pot until onion caramelizes.
Add meat.
Add teaspoon of cumin, teaspoon of cilantro powder, and diced canned stewed tomatoes.
Add chicken bouillon (instead of salt) to taste.
Let simmer for two hours.

Warm tortillas by very lightly coating with olive oil and placing in pan for about 10 seconds on each side, just enough to warm tortilla.  Do not overcook.  If tortilla is cold, it will crack.
Add meat to one side of tortilla and roll.  Pin with toothpicks.

Shred cabbage finely.
Add vinegar, lemon juice, olive oil (like an Italian salad dressing).
Slice tomato into very, very slim slices.

Deep fry tacos until done.
Place on plate to cool.
Add cabbage, tomato.

As you can see, it's a two day process but they are unbelievable!

So, we decided to attend FLOG on Saturday night and then hit the strip club, FLOG is about half way there and in the interest of fuel conservation (me and my witchy ways!) we thought it would be better.  We also got our holiday party invite from Thea...yeah, i love her parties!

Ok, Sir is ready to go to Walgreens to pick up my meds (and a Redbox movie).
